We hope that everyone who can will join us for the delicious onsite meals, but purchasing meals is no longer a requirement for eating in the Dining Commons during our conference weekend together. Bringing your own meals is fine.


Like last year we will not be offering individual meals through our registration process, nor will the venue. Meals may be purchased only by the day — that is, Saturday, Sunday, or both days.

Onsite Meals and Our Menu Selections

Saturday — Lunch
Thai Curry Coconut Prawns

Wild prawns swimming in a spicy-aromatic coconut sauce accented with kaffir lime leaves, ginger and Thai curry. Served with Sticky Pineapple Rice and Sesame Baby Bok Choy. 

Seared Tofu and Vegetable Stir Fry (Vegan): Marinated tofu seared crispy with seasonal vegetables tossed in a tamari based spicy ginger sauce. Served with Fried Rice.

Lunch includes:
Two soups, one of which will be
​vegan, gluten-free, and lactose-free
Salad bar including fresh fruit
Sweet treats, including gluten free!

Everyone is on their own for Friday meals,

although we're welcome to bring our own food and eat it together onsite.

Bastyr University Catering Services provides catering for all onsite meetings, conferences, and retreats. Prepared by their chefs from scratch, meals are tasty and made from the highest quality ingredients — organic whenever possible. Bastyr takes pride in its sustainable practices such as their comprehensive composting of corn-resin "plastics," paper, and food wastes. Bastyr has practiced sustainable catering for over 20 years as part of its mission. 

Saturday — Dinner
Mediterranean Lamb Meatballs with sauce (tomatoes, capers, garlic, and olives)

Jeff's Classic Vegetable Curry (Vegan):

A long time Bastyr favorite! An assortment of seasonal vegetables in a rich coconut sauce with Indian curry spice. Served with Fragrant Basmati Rice Pilaf and Petite Potato Samosas.

Dinner includes:
Brown rice
Seasoned quinoa

Two soups, one of which will be
vegan, gluten-free, and lactose-free
Salad bar including fresh fruit
Seasonal sautéed vegetable side dish
Desserts, including gluten free!

Sunday — Lunch
Mandarin Orange Chicken
Crispy tender chicken stir-fried with seasonal vegetables and dressed in a tangy mandarin orange sauce. Served with Toasted Coconut Brown Rice and Baby Bok Choy.


BBQ Tempeh (Vegan):

A high protein superfood! Delicious tempeh (fermented soy and rice) roasted to crispy and finished in a BBQ sauce. Served with Quinoa Pilaf and Steamed Broccoli.

We will have the opportunity to share five onsite meals during the conference weekend. All three meals on Saturday, and breakfast and lunch on Sunday. Our menu selections can be found below and to the right. 


There will be one vegetarian and one non-vegetarian option available at both lunches and at the Saturday dinner. Be sure to tell us which you want! And we'll want a good vegetarian count for breakfasts, too.
